20g Lemon Juice

Assemble

1 nos Chilled Caramel Pudding (A)
20g Strawberry Cream (B)
25g Vanilla Cream (C)
20g Macerated Strawberries (D)
As Needed Sponge cake cubes
As Needed Strawberry Jam
As Needed Granola
As Needed Fresh Strawberries

Chilled Caramel Pudding

  1. Cook A1 Water and Sugar to a caramel, then slowly pour in the hot water.
  2. Pour the cooked caramel into the pudding mould and let harden.
  3. Bloom A2 gelatine with water together and microwave until melted.
  4. Heat up Milk (first portion) to 70°C. In another bowl, whisk the egg yolks and sugar together.
  5. Temper in the heated milk into the egg yolk and transfer the mixture back to pot and cook to a sauce consistency at 70°C.
  6. Remove from heat and add in A4 ingredients and mix gently along with A2 melted gelatine.
  7. Pour the custard mixture into the pudding mould and let chill until completely set before serving.

Strawberry Cream

  1. Whip Rich's Gold Label with strawberry flavour paste to a stiff peaks form.

Vanilla Cream

  1. Whip Rich's Gold Label to a stiff peaks form.

Macerated Strawberries

  1. Combine all ingredients in D1 together and let sit for at least 30 minutes until the juices of strawberries weep out.

Assemble

  1. In a parfait glass, fill the bottom with macerated strawberries vanilla cream, strawberry jam, strawberry cream, fresh strawberries, granola, and fresh strawberries. Top of the parfait with the Chilled Caramel Pudding and decorate with whipped cream and strawberry.
